Fruit Salads (Tropical Fruit Salad)
Tropical Fruit Salad
with Citrus Sauce
Ingredients:
2 large mangoes, peeled and cubed (1-inch cubes)
1 large papaya, peeled, seeded and cubed 3 kiwis, peeled and cut into slices (1/4-inch thick)
1 pint of strawberries, hulled and cut in half
1 star fruit (large), cut into 1/4-inch slices (pineapple may be substituted)
Put all fruit into a large mixing bowl and mix gently until homogenous. Pour citrus sauce over salad, mix again before chilling in a refrigerator.
Citrus Sauce
Juice of 2 large oranges (approx. 1 cup)
2 tbsp lemon juice 1 tbsp honey
1/2 tsp grated nutmeg
In a small mixing bowl, blend all the above ingredients with a hand whisk. Serve with fruit salad. Garnish with fresh mint leaves.
Note: Use organically grown fruits if available.
