Ready to receive all of the wonderful health-enhancing benefits and fantastic flavor that this Mango Bisque with Mixed Berries and Fresh Mint has to offer?

Let`s get food prepping!

This recipe makes enough for 2 large-size portions or 4 medium-size portions.

Time Saving Tips: Be sure to take out oranges and lemons from the refrigerator (if you have them stored there) at least 8 hours before you plan to prepare the Mango Bisque. There is a higher juice yield from room-temperature citrus fruit.

Ingredients for the Bisque...

Mango flesh (this weight is after the skin and seed are removed) = 1-1/2 pounds (total ounces = 24)

Orange juice freshly squeezed = 1-cup (dry measure)

Lemon juice freshly squeezed = 2 tablespoons

Honey = 2 tablespoons

Ingredients for the Garniture...

Berries (a mix of blackberries and red raspberries)

Fresh peppermint or fresh spearmint

Directions for the Bisque...

Puree the bisque ingredients until smooth. Use a heavy-duty high-powered blender. A blender pitcher with stick motor attachment will also work (known also as a hand blender). Equally divide the bisque between 2 bowls.

Directions for the Garniture...

Now that you have the bisque, you are almost finished. For each of 2 servings, use 5 to 6 ounces of red raspberries or blackberries or a combination of both. For that je ne sais quoi, add 1 tablespoon(for each of 2 servings) of minced fresh peppermint or minced fresh spearmint.

Notes...

*The weight given represents the flesh of the fruit/vegetable. In other words... After trimmed up, the amount given is the amount that is actually used in the recipe.

*To get the 1-1/2 pounds of mango flesh, do obtain 3 pounds of mangos. If the mango variety you choose is quite fibrous, up the weight of 3 pounds a bit because you don`t use the mango fiber in the recipe, and you want to make sure you have enough useable mango flesh to make the bisque.

*If using a fibrous mango, simply puree the mango and squeeze the mango puree through a nut-milk bag to separate out the pulp (fiber). You can spread out the mango pulp/fiber onto unbleached parchment paper and place it into a dehydrator to remove the moisture. Then, you`ll have a mango flour to use in a raw (uncooked) recipe.

*There is a mango variety that is near fiberless and this variety is the champagne (also called ataulfo) mango.

*According to the mango variety, there are differences in color. Usually mangoes start off green. As they ripen, their skin will blush either a gold/yellow or orange or red or a combo of these colors. As the mango continues to ripen, these colors increase in area. Some mango varieties are the exception to the rule. For example, the Keitt mango variety stays primarily green with a hint of gold/yellow. Mangoes come in hundreds of varieties from small size to mangoes that weigh in at 4+ pounds.

*A ripe mango will yield to slight pressure. Black speckles may appear on the skin, and to a lesser degree this is a sign of ripeness.

*For the orange juice, suggested is to use Valencia or Jaffa (sweeter than Valencia) or blood oranges.

*For the lemon juice, suggested is to use lisbon, eureka or bearss lemons. Meyer lemon juice will change the overall taste of this recipe to a sweeter version.

*Hulled red strawberries are very delicious in the bisque either alone or mixed with the red raspberries and blackberries.

*For health, important is to use a honey that is pure, unprocessed, unfiltered and unheated. In addition, you can obtain honey that is certified organic.

*Frozen mango and frozen berries may be used in replacement for fresh ones although, make sure the frozen mango and the frozen berries have not been heat treated (for the best nutrition).

*What is a dry measure? Dry measures are the graduated measuring cups that come in 1/8-cup, 1/4-cup, 1/3-cup, 1/2-cup and 1-cup etc. These type measuring cups stack into one another, and they come with handles.

*Best flavor and best nutrition will come from produce that is in-season, locally-grown, freshly picked, ripe, heirloom and organically-grown or sustainably-grown or biodynamically-grown. Always keep in mind this high standard, and do the best you can.

Please, will you comment on how you like the recipe?

Thanks so much for reading.
