I will cut tofu and use boiled eggs, and probably eat more steamed fish and chicken, and get a streamer for the veges. The challenge for me is that I have to bring 2 meals to work, I have to microwave them, I am not sure how much that will damage the already well-cooked veges. I understand frying as you mentioned is not good. What I did is boiling brocolli, cauliflower and carrot then only use the frying pot to mix them with heated olive oil quickly. Again, I very much appreciate your reply, I will look into the supplements you suggested.
A few more questions:
** Do you think adding fish oil capsules to diet is a good idea?
** I don't have distilled water at work, do you think purified water could be the second best. Searching at google for "distilled water" shows a lot of negative comments on intaking distilled water for more than 2 weeks. And boiling it with vege could extract vitamins and minerals out of them. Just curious, using distilled water in your case is just from experience or you have some theory behind it. And how strict would that be?
** When you say restrict intake of the grain, that doesn't count for barley and brown rice, right? Would it give better result if I reduce brown rice and enlarge the proportion of veges?
