Don't really "drink" milk, so soy milk is fine on the occasional morning when I have an espresso and I've also experimented with brown rice milk and almond milk. I've given up cereal, so don't need milk for that...not baking anything...

But oh, parmesan cheese is a really tough thing for me to do without. My family eats pasta at least twice a week and I am fine with a little whole wheat pasta or spaghetti squash or even just sauce (I make my own - separate from the family's - with no sugar, oil or meatballs - and maybe just a splash of red wine tehe) on other veggies like zuchini, spinach, etc.....but I want my parmesan on it.

I have read recipes which call for vegan parmesan (a soy product) but haven't been able to find it in the local health food store. And "vegetarian" rather than vegan soy cheeses contain dairy - I am constantly amazed at how much I didn't know about vegetarian/vegan issues.

I need to reset my thinking to where I will do whatever it takes to lose the weight...knowing that after it is off, I can add back small amounts of anything I REALLY miss...like parmesan...or not. It is a truly interesting process and I feel so blessed that I didn't have to develop major health issues before I discovered how much I was doing "wrong".
