I will tell you grassman (and I understand the current paradigms), that you need to read Good Calories, Bad Calories. It will blow your mind.
Taubes, the author, has written the most unbiased book I've ever read about our ideas about food and diet. The only critical review (because he covers his bases with 100 pages of references, peer reviews, studies, etc), is that it's too difficult to read. Meaning, it's packed with biology, physiology, studies data, etc. My husband is the ULTIMATE cynic, and thought Atkins was a whacko. He has aspergers, and is firmly tied to science, in all it's glory.
He read that book (which takes awhile) and looked at me and exclaimed "everything we know to be true is BS". And yes, it is.
So, it's hard to debate about this when the data about nutrients are contained in that book. It's not a diet book, and it's NOT written by a doctor, Taubes is scientific journalist that merely examines the available data. And he has put together a manifesto.
So, I don't want to tie everything to one book, but truly, that book is amazing. Since then I've read many others, but they are still over shadowed by that one book. You talk about "logic"? That will be your paradise. There is zero marketing in it.
