I'm afraid so many legumes would be a bit heavy for her. You could try to sprout them and see her reaction. My son didn't want sprouts at the beginning, but cheating a little I always give them to him, but he is also 2-years.
What about going just with vegetables and fruit? there was a post some time ago (sorry, I didn't bookmark it) in the Barefoot Herbalist forum, of a woman mother of two twin girls, 2yo, she was saying that her daughters never had anything but vegetables and fruit and almond milk in their life, and they were growing fantastic, having no tantrums, just very loving cute little girls.
