I basically live on rice and veggies with a large amount of fruit. I eat enough were I meet all my calorie and nutritional needs. I can tolerate as much starch and fruit as I want compared to when I was eating low-carb when I got sick. The key for me was to eat low-fat/low-protein and high-carb and stop being afraid of sugar.
Are you able to eat large amounts of rice or other starches with veggies throughout the day? What about fruit?
