Skipping meals would definitely put you at risk.

Again I want to express that I'm not urging you to go all the way vegan again, just back towards plant-based because it's obvious your case is what mine was of doing a vegetarian diet most likely wrong, started feeling like crap, switched to a more of an animal-based diet and initially felt better, but now feeling like crap from that diet.
Here's what I suggest for you to try since I know the thought of eating something like 80-10-10 makes your really hesitant after the first time eating plant-based ended up not working out for you at all.
Download that free app from

and track your daily diet for a couple of days until you get what your average macro carb/protein/fat ratio is.
Since you're now eating more of an animal-based diet, I'm assuming your macro ratio is more like 40-30-30, the classic recommended low-carb ratio.
Do the veggie juice fast like I did and see if that heals your symptoms which I think are the toxic hunger symptoms I had. Monitor your blood
Sugar throughout to see how it reacts. Have prepared backup meat to eat to help relieve your anxiety if the worst case happens and your glucose starts dropping too low.
If the juice fast heals your symptoms, then instead of eating 80-10-10 which worries you, try eating 60-20-20 and see how you start feeling.
