i think he is just pointing out that if he keeps the high brix produce in a clean environment it doesn't rot, it just naturally dehydrates, which is a good thing. in that same environment, the low brix produce will rot. now, if he put that same high brix produce on the mulch heap it would rot same as anything else, which is good.
