I forgot to tell you some good things that maybe you can eat. I'm not really sure what your intolerances all are, though, but this should give you ideas.
Well, I used to do a lot of stir fry, but, that got oily after a while, and I sought something more. I found it!
Baked stuff. Much better than fried. Feels great.
So, I got a convection toaster oven and an eight
inch Lodge cast-iron pan, as well as a glass roasting pan that fit inside. I found that I could just put frozen corn, spices, a little oil, and something like a chicken breast or a tilapia fillet in the cast-iron pan, bake it for about 40–50 minutes and eat. It was tasty and good, and it made me feel great—a lot better than stir fry. Plus, I got iron from the pan. You can replace corn with other frozen vegetables, like broccoli, or whatever.
Then, I discovered that I could bake Jasmine rice and sushi-style rice along with it, and it seasoned the rice while it cooked it, with everything else. Much less hassle than cooking it in a rice cooker, frying up your food and all that. I mean, it's one step versus a lot, whether or not it takes longer. It doesn't work with every kind of rice, and it works a whole lot better in a convection oven like my toaster oven. Regular ovens will make it really crisp on top and won't cook it as uniformly, and the rice will be stickier than it is fluffy (but it can still taste good, I guess, if you do it right).
All you do is put everything in the glass roasting pan (seasonings, rice, meat, etc.) Put in twice as much water as rice. (Don't do a ton of rice, since toaster ovens aren't huge, and neither will be the roasting pan. I had a 12" oven interior.) Mix it up, and bake. Then eat. You can do stuff while it's cooking; so, you don't have to be consumed by the task like you do with frying.
Bake on 450 degrees F. for just under an hour or so (45 to 60 minutes).
