According to Nutritional Balancing Science a toxicity in one or two minerals can cause you to have severe psychological issues (i.e. copper toxicity = anxiety).
The mental illness can be the result of malabsorption or dietary restriction (i.e. vegans missing out on key nutrients).
I'm not saying that anorexia is absolutely not a psychological issue - I am just saying that there has been a lot of research that there could be a dietary component (zinc deficiency). And that a toxicity in certain minerals can make a person think irrational thoughts. Psychology doesn't ALWAYS come first.
