If i recall a good amount of the lactose does get converted to lactic acid by specific friendly bacteria(thats why plain yogurt tastes sour), But maybe the remaining lactose gets broken down into 2 simple sugars by different flora/yeast. Cant remember though.

I know i was always lacking a good amount of the lactic acid producing good  bacteria because I was lactose intolerant as a kid.
