vom fass is not an "brand", rather it is a middleman for several smaller independent vinegar producers who make vinegar the traditional way. Each of the vinegars that they carry is unique, each one has a slightly different blend of various ingredients.

No I do not know the Malic acid content of any of the vinegars.
