As you say, this is a problem. One has to take into account all the risk factors to decide on the best diet for each individual. For someone undergoing a flare-up of yeast overgrowth, there is a good argument for going on a low carb, high protein/fat diet, in the short term. However does that have to be in the extreme, and does it need to be continued for months or years? I suspect in most cases the answer is probably no.
I think one can also be guided by how one is travelling on a particular diet, be it high carb or high fat/protein. If one feels well in the long term on such a diet then there is a good case for sticking to it.
Speaking for myself, I've been on a high saturated fat and protein diet for about 10 years or so. I certainly don't feel better for it. So why stick to it? Well, a couple of reasons. Firstly I was trying to keep Candida under control, and secondly, I'm prone to putting on weight and a low carb diet helped me control it. However I now think this diet has worsened my long term depression. So for me I think there is a good case for cutting back on fats and protein and gradually reintroducing carbs and see how I go. Obviously I will be nervous about Candida, but I now think I probably overestimated the influence of Candida on my health. I now think bad bacteria are largely to blame, and the high fat/protein diet may be supporting these bad bacteria.
So, I'm not saying low fat/protein diets are for everyone. Just that there are potential negative health consequences of sticking to a high fat/protein diet that should be considered.
