its tough, maybe we should not worry about getting "enough" calories and just focus on getting digestion to where it needs to be. i could probably eat 10,000 calories a day and not gain weight.
i definitely couldnt do raw. tried and while initially i felt really good and had tons of energy i crashed and burned HARD. definitely feel better eating cooked veggies.
do you eat grains/beans? the verdict is out on those for me still.....i have read a lot about how humans cant properly digest grains. i have been avoiding them but maybe i should think about adding some in.
most vegetables are low in calories, i have looked up the nutritional information on them and the higher calorie ones are 100-200 calories so you would have to eat a ton in order to reach 3000. sweet potatoes are a high calorie vegetable and have been a staple in my diet. high calorie foods are stuff i will not touch.
i'm a vata too but i cant do fat, cant digest it. if i eat avocado or coconut oil it makes me feel horrible.
