you are dealing with intestinal wreckage at the moment. I would cut the dairy and gluten right away, lots of us are intolerant on here and you don`t know if you are yet because of your symptoms. The fats you mentioned are ok for one tbl per day. Anything more...more fatty liver, colitis and weight loss. A wheat intolerance could explain your absorption issues...it could be going simultenously with fatty liver from peanut butter and coconut oil.
Meats, I would add back the little bits of white meat chicken after a week. I am talking about one filet per day is at the most. Before that, making an actual meal out of mashed redskins, flavored with broth, roasted shallots, onions, a salad, steamed asparagus is what I would try. Steamed cabbage and squash will also give you calories.
Where you are at now it is cramming in proteins and fat to an inflamed intestine, causing weakness. Bring down the inflammation with the veggies, lift some weights...do some cardio too..and in a few days your colon could be ready for a small chicken or seafood serving.
