carrots and apples would constitute an almost mono-diet and is not recommended. Food should be as diversified as possible to receive the max' nutrition.
If you are not receiving enough calories then you will lose weight. Are you losing weight?
A farmhand or anyone involved with heavy physical labour will "burn" more calories, so will require more calories and food than someone in a sedentary occupation, therefore eat more according to appetite, which will be greater.
The amount of calories needed depends on your physical activity: nothing more and nothing less.
If you are not eating enough food, you will lose weight, but if you eat too much, then you will gain weight. Your body is the best judge here and not the "number" of calories so-called "experts" say that you need on a daily basis.
