i am not a scientist proper or a biologist in particular. but i know this -
excess acid is created by eating foods that require acid to digest such as meat and eggs and dairy. then, if carbs are consumed with these proteins they cannot digest properly because they require an alkaline environment. therefore they rot on their way through the guts and create more acid until they exit.
how people choose to deal with that is their own personal business. the MD that wrote about this suggested not mixing the two. this has worked for me and my ph is fine.
