I have no good answer for you. Producing stomach acid is
never a problem for me. (Then again, my diet runs the gamut from
juicing one day to SAD the next.)
One thing I have observed is that, with the evening meal, consuming digestive enzymes really makes my stomach more acidic more quickly. I can determine this from how long it takes, if I (over)eat a big meal, before I can feel the burn of acidity in my throat. Without enzymes, I can find myself waking up at night because of acidity in the back of my throat (along with digested material... don't create a visual of this, it's not pretty). With enzymes, this occurs well before bedtime.
So I'd suggest trying digestive enzymes, unless you're eating all raw. I can't make you any promises, however.

... or what trapper/kcmo said. If you're having a problem producing acid and you're drinking an alkalizer, I'd have to agree that cutting back on the alkalizer might be a good and obvious thing to try.
