Slice the liver thin like a schnitzel. Get some fat hot then quickly coat in corn starch and fry until the outside is crisp. Hold warm for a few minutes to allow it to compete cooking season and enjoy.
I used to love eating it in certain restaurants since they used the deep fryer to do it this way but eating the oil filter of animals fed other deceased animals and injected with drugs just isn’t the same :)
Unfortunately most organic restaurants still cater to the veggies...
