You'll love Price's book. I gave a copy of it to a friend of mine who is a periodontist a while ago, and we double date occassionally with our wives. He appreciated learning all the info that he now recognizes was kept from him in dent school.
Glad to hear you are doing the organs thing. A good old Jewish secret is to put chicken feet into the chicken broth, and I agree that chicken broth just isn't right without the feet, it doesn't gel the same.
I recommend that you eat the liver. Hard to do for some not bred to it. Try cutting it into nuggets, breading and deep-frying in 50:50 coconut/peanut oil. Alternatively, butter a skillet well and lay slices from an onion so they cover the pan, then flour the liver and lay atop the onions, place on low heat, and cover. Cook 15 mins on each side, then add gravy to just submerge the liver. Heat another 15 mins on low. Serve with favorite vegetable, & cet. When our children were all very young, I broke them in on liver and sardines. They look like posterboys out of Price's book relative to dental arches and lower facial development. All straight A's students, of course. Someone's got to support me in my retirement once I return from vacation.
