It sounds like you are a step or three ahead of me then... So I would think it a simple matter of really paying attention to how you feel on a daily, hourly basis, and how any dietary changes, no matter how subtle, may affect your well being.
As an aside, I use the 70 - 75% raw as a conservative guess on my raw diet based on my consumption of hemp bread and some organic dairy most days... I do not think I have "cooked" in over 2 weeks now and do not really want to. :-)
