I've been pretty concerned with my diet actually, and some days i dip down to 1200 calories. My naturopath said to aim for between 1500 and 2000. I just don't know where to get all these calories and carbs. Theres so little I can eat, and I'd have to eat more than 10 lbs of veggies a day to get those numbers. One of the only grains I can tolerate is buckwheat and I get 142g of carbs from that on most days, It's expensive though and it's killing my wallet. Do you have any type of sample diet I could look at? I'm 5'7" and 165lbs btw.
