I think 3 to 6 months is long enough to find out if something works or doesn't. Recently my husband and I tried Milagro de la Selva tea to see if it would put our diabetes in remission. We gave it 6 months, even became strict vegans in the last month, and it didn't work. So...what may work for one person may not work for another.
I say any exercise you do is worth doing! You do what you can, when you can. In fact, I think if you try to do too much too soon, you can get discouraged and give up. At least you are doing some exercise---that's more than many people do! To use an old cliche but one that fits---give yourself a pat on the back---you deserve it!
I think that it sounds like you're doing well with your daily food intake. Also, I believe it's okay if you want to allow yourself an occasional indulgence (a cookie, a small scoop of ice cream). On our non-vegan days, we allow ourselves a treat. I think it's best to do that so you don't feel deprived. Of course, it's up to you---this is just my two cents.
