I love omelettes. Green pepper and onion, sometimes throw in some cheese, optionally a little chopped chicken, beef, etc. Jalapeno peppers give it a nice kick, and a little chilula sauce -mmmmmm good.
I lke hard-boiled ones in a cesar salad (optionally containing seared yellowfin tuna or ham or chicken), prepared using raspbery vinegar and grapeseed oil. And some good Italian bread with Irish butter that was made in the springtime, April being best. Mmmm.
