February 9, 2011

I am really starting to hate the cold COLD weather and I am almost dreading staring this water fast on Sunday, since it has been so cold. It is going to feel 10 times worse, once my metabolism has slow down again. I am trying to prepare for that, but I don't think I can. I don't think I can bundle up anymore then I can right now. This weather is just not good for water fasting, and if I wasn't dedicated enough, I would hold off my fast until a warmer time, so I could deal with it better. But I feel that now is as good as any, so I will not postpone it until later.

Getting out of bed was not pretty, as I just want to lay there with my beloved Mekong purring and keeping me company. I know that I will have enough of that on Friday, as I have it off from work (they are nice enough to grant our birthday's off with pay)

I checked my Post office box today so that way I knew to check it again on Thursday. My Dad told me that he was sending out my birthday card, so I was curious on what it was. It was a lovely card that my Step mother picked out, but what was really special is that my Dad SIGNED it! My Dad doesn't sign much anymore, since he is all shaky, very much like my Gram was. I could tell in the handwriting, as it brought me back to watching my Gram trying to sign a card or something. I made me feel very special that he signed it, as I know it wasn't probably easy for him to do so. I guess that is why the card was so special to me, that I propped it up in front of me while at the office and in my living room and finally on my dresser in my bedroom when it was time for me to sleep.

I went to the grocery store after work and picked up some food, mostly dry goods like (barley, lentils, brown rice) and some real maple syrup (not cheap either). I got some , grapes (they were still on sale) bananas and some dried cranberries and raisins. I plan on using the bananas and dried cranberries and raisins in the brown rice pudding I will make. The dried cranberries and raisins will keep until after my fast, but the bananas can be frozen for future use until they are needed. I got another bunch of asparagus, as it was on sale for $1.99 a pound! I couldn't pass it up, as well as they had a two dated bags of baby squash baby zucchini, and a bag broccoli and cauliflower. I couldn't pass it up. I will tell you that I enjoy fresh so much better then frozen. I also picked up some egg whites in a carton, so I could make some egg rings (using my mini donut pan that I bought at Goodwill a couple months ago). I can't say that I have every enjoyed grocery shopping, as much as I do now. It is probably because I have a much more healthier outlook toward to the food that I am eating, as well, as I find myself lighting up when a different veggie or fruit is on sale. For example, Mangos were on sale for 2 for $1.00. And when I was the grocery store, I just lit up with excitement, and I wanted to buy some, but since I was starting a water fast, I didn't want to buy a lot of fresh fruit and veggies because of that. Yet, it shows me that my mind seems the goodness in veggies and fruit. While I was in the bakery section, I checked out the little cakes, trying to figure out what little delicious thing I was going to buy for my birthday. I played with the thought of not getting myself anything like a cake or ice cream, but I have worked very hard to keep my life on a healthy life style.

I am curious on how much I am going to like eating a little bit of sugar (I probably should say a lot since I will probably have cake and ice cream) other then the natural sugar that comes from fruit. It will be the first bit of white processed sugar since January 28th, (it will be 2 weeks on my birthday) when I had a pudding cup that I bought. It is funny that the rest of them are still sitting in my fridge, not tempting me at all. If anything I want to grab grapes or veggies if I want to really snack or have a some a little sweet.

I also got a large chicken breast stuffed with stuffing. I asked the woman at the deli to cut it in half for me, so it would be easier for me to separate and cook for serving sizes. I had one for dinner and I will have the other half for dinner tomorrow for my birthday. Yay!

When I got home, I got my dinner into the oven and called my father to tell him that I got my birthday card. He was surprised that I got it so quickly. It old him how lovely it was that he signed it. My stepmother was happy that I like the card, as she knew that I loved my cats, that I might like the kitten Birthday card. I did like it. It was really cute. We talked about various things. I told me that my wrist/arm is doing much better, and I am really taking it easy, as I still getting painful twinges, but I hope by next week, I won't feel a thing. We didn't talk too long, as my dinner was in the oven, and I was going to have to take it out soon. We told each other that we loved each other and my Dad mentioned that he would be calling me on my Birthday, which I am really excited about. I love it when my Dad CALLS me.

Dinner was a lovely affair, since it different this time (no Salmon and no beans). It was lovely to make a change with it. Of course, I loved the veggies as normal. After dinner, I prepared some egg rings (in my mini donut pan) with chopped spinach, strips of carrot and some seasonings (garlic, pepper, onion and herb seasonings). I was kind of excited about doing this, as I bought the pan a couple months ago from Goodwill. I thought I could make healthy egg bakes as well as some healthy bagel bakes. I fixed the little egg mixture in the mini donut pan and went to put it in my toaster oven, and it wouldn't fit! I never checked to see if it fit or not. I ended up putting it in long ways in the toaster oven and draping some tinfoil over the door so it would keep the heat in and cook. I wasn't happy about the pan not fitting, but It never occurred to me that it might not. It was the handles that keep it from going in and fitting correctly. Oh well. It was a lovely thing that the tinfoil drape worked well and they cooked up really well in 25 minutes. I let them cool off and I placed them in the fridge so that I could eat them for breakfast.

After the egg rings (as I will call them ) were put away, I started winding down my evening and started getting ready for bed. I took a nice shower, and put my wrist guard on. It was painful when I used it, such as carrying in groceries, and it hurts more if I take it off and used it without the guard. As I said, my wrist/arm was feeling a lot better then it orginally did, but I choose to sleep with my wrist guard on for one more night. It started feeling much better once I put a little bit of Icy Hot on it, and took an Excedrin for the pain. I will test how my wrist feelings tomorrow morning and go from there. I will really need to dishes when it does feel better.

I read a little bit before I snuggled down in my blankets and fell asleep. It seems that the last thing I recall, which seems to be common the last week or so, is Mekong sniffing my wet hair. LOL She must really enjoy the smell of the conditioner that I have been using.
