Maybe one day i will work to strictly vegan, but for now i do need the extra fat in my diet to help make my blood sugars to be stable. Peanut butter helps but the little higher fat foods help keep my sugars at a normal range instead of dipping to low. I am always experimenting with different items to see what helps to keep my blood Sugar stable. I chronically go low with the very little insulin i am taking but if i stop taking it then i go to high. So i just have to keep experimenting.
