All good, but you will benefit most from doing water only fast. Especially if you have insulin problem. If you have insulin problem don't eat potatos or desserts. Desserts can be Keto desserts made with coconut, coconut oil and cacao powder.

Re-feeding protocol of starting with fruits is only for long water only fasts. If you do short fasts no need to worry. If you don't like fruits that is great, less Sugar in your body.
From what you describe, how well you are doing. You can fast one day a week.
