yes, sprouted beans are delicious and most likely the most nutritious way of consuming them.
Mind you I would take exception with your comment that all protein sources can be acid forming.
There is a train of thought, to which I subscribe, that animal protein such as chicken, is actually chicken-protein and NOT human-protein.
For the body to utilize this protein, the chicken protein has to be broken down into its constituent amino-acids (the base of protein-formation) in digestion, to actually form human protein, and where the energy required for this is ginormous and inefficient.
On the other hand, if we consume foodstuffs of a plant origin, which all contain amino-acids, and where quite a few contain all 8 essentials, these are readily available for their conversion to human protein, and makes us what we are; this is without the huge demands for energy that comes from digesting protein of an animal origin.
I was vegan/vegetarian lacto-vegetarian for decades, with no apparent ill effects but distinct benefit, but now I do eat some oily fish because of the DHA factor, and the lack of conversion by the body of ALA into DHA from plant sources.
I would agree with you that the over consumption of animal protein can lead to an acid build up, and indeed gout and even kidney problems, but of course no danger of this from plant-sourced aminos.

...............But lets bear in mind the equally as silly propaganda from the meat industry as well, as they have an axe to grind and meat to sell of course.
