I know your post is a month old now, but if you are still in this relationship and your girlfriend is open to suggestions, I would suggest the book "Carbohydrate Addicts Diet." For many there's actually a hormonal imbalance going on in the body with the hunger controlling hormone insulin. The disorder is called hyperinsulinism and what happens is that when a person who has this eats in their normal manner of eating then their body puts out too much insulin which causes them to be hungry again and driven to eat again, then it puts out too much again, and they may eat again and again and never really feel full but always hungry.
Yes, I believe there is an emotional side to ED but there are also physical reasons and when the person is constantly hungry with the hunger hormone rushing through their veins and the body becoming a wonderful fat storing machine and they can't control it or explain it - and they are ridiculed and calle weak and all sorts of other things - then this in turn causes many of the emotional problems.
