I went vegan a little over two months ago. I've recently developed an enlarged thyroid (only gets big when I eat something without fat or protein) have gained weight and my bloodwork is coming back WAY too healthy. I did a little inventory of my diet and realized that I was almost completely fat free and I used to eat a TON of fat and be skinny. So I tried an experiment. I ate two bean burritos from taco bell at 6:00 last night. Without cheese they are vegan (my buddhist friends assured me)and they are really high in fat and protein. What do you know. This morning my thyroid was almost completely normal and my pants fit a little baggie. So I had lentil soup for breakfast (ate the whole can) and had a soy decaf latte. My thyroid has stayed low but is aggrivated some. I'm convinced my thyroid issue is diet related. I also have horrible icky dry, flakey scalp and candida history.
With all of that being said....should I try coconut oil and if so, how do start?
