It seems that you indeed are sensitive to gluten, there is a recognized suspicion amongst health specialists that systemic candida is majorly caused by gluten- or lactose intolerance.
I've had almost the same symptoms, sleep-wall after intake of gluten, joint pains and such but my heart is rather weak so i've had heart irregularities instead.
It's always good to reassure with a biopsy that some kind of gluten-intolerance may be present, in celiac disease the colon is exposed to a 40 to 200 times inflated risk of catching cancer if there is presence of gluten, however if you have come to the conclusion that your symptoms are traced back to gluten then a lifetime gluten-free diet is all you need and an appointment with a knowledgeable dietist/homeopath to confirm your suspicions.

Leaky gut is preferrably healed when not taking any antifungals except garlic, for a week so it gets a headstart or to a major advantage, a month.
It may heal also with the presence of antifungals but not in such rapid state as without.
The headpoint is not to take any kind of allergens, dairy (yoghurt, eggs), caprylic acid until symptoms of candida are gone.
I have been thinking of making some oat-porridge of clean oats but i've been just too shaky to have the guts to try it out.

Especially onions are good for leaky gut and garlic too but garlic may cause some sourness in the gut if it's taken in too large quantities, trying out is the best method to adjust the dose.
Somewhat debated is Aloe Vera juice, it's majorly beneficial against inflammaions especially in the gut but since it's made of polysaccharides to 25% of it's content makes it a little misgiving, polysaccharides are a kind of Sugar in long-strains which means that it stays the same way ingested as digested so i've found it a little disputable lately fi candida can get to it so easily.
But if i would have been forced to go through leaky gut again i would take aloe vera two spoons a day no matter what happened, since it doesn't cause too much a fuss anyway.
