Hi Fiona, I don't have a problem with spelt, if it is not gluten free it does not affect me as badly as rice. I suppose we are all different.You could make the bread with all buckwheat flour, but some percentage of spelt improves the tast and texture. I'm also hooked on Dr Karg's spelt crispbreads with seeds which we can get here in the UK in health food shops. Love and Light, Deotima.
