Locate the .exe

If installed to the default location it may be in C:\Program Files\Adobe\Acrobat 7.0 or whatever version it is.

Then choose the .exe and do your file association for .pdf

Also, you may have (I do not know about all versions) the option under Adobe preferences (in the edit drop down menu of the reader once opened) where you can set settings for the internet and possibly FIX file associations.
