Multiple food intolerances, mood problems and troubles living socially


Hello everybody, I suffer from multiple intolerances from food, meaning that after having eaten a specific food i get several symptoms, often the day after.
These symptoms can vary but generally are: fatigue, depression, mood and concentrating problems, headaches, drowsiness. Other problems (more physical) are: mild reflux (depending on food), random skin itch, constipation, dry eyes, throat phlegm, and others. I also suffer from essential tremor from i was 13.

I came to the food intolerance conclusion after i kept a food diary, as i saw that some days i was healthy and happy, and other i would lay desperately on my bed, being frustrate for my condition and unable to think straight. This would come after eating some foods, as diary, gluten, nuts, cooked meats, nightshades. In the last days i had experienced headache even with a meat broth and drowsiness with spinaches, which seems absurd to me, but happened.

These intolerances affect me even for sleep and thermal regulation (sweating increases).
Living is difficult and i think i'm becoming more sensitive to foods. That's why i'm increasingly frustrate and i don't know what to do. My social and professional life are heavily impaired.

It's 2 years i'm avoiding dairy and 7 months for gluten; i've also took glutamine and other supplements in order to heal what i think can be a leaky gut. I've indeed got better, but when i get these relapse, they hit strong.

The problem is also i'm not able to eat a restricted diet for a full week, as my family would call me crazy and say it's all in my head. I know it's not as I've already evaluated the psychological option, and got into meditation to relieve stress. It indeed helped, but i observed a direct consequence of food on my health, seeing that is the real cause.

Now, i don't know what to do. I discover a new intolerance everyday, and the permitted foods are only: fruit, raw meat/fish (they lack beta-carbolines and ages produced with cooking, which aggravate my tremors), raw egg yolks and probably rice.
Also, i don't know who to talk to, and honestly i don't want to commit to several months protocols in order to heal, if heal is possible.

I feel medicine is very inconclusive on this matter, and how i've always been treated by professionals did not help. They always said i'm healthy and dismissed me, without never investigate the causes of a tremor in a child (which i was) not what caused IBS (which was diagnosed with no treatment prescribed).

I'm in a limbo where i'm unable to live, my family thinks i'm crazy and i don't think there's somebody which can help me heal fast. I also think at the exams i'll have to pass in september, my friends etc, and all gets worse.

I'm writing here because i need to talk with people which understand how hard is dealing with these problems. My next step is probably radical and involves a 4 or more days water fasting, hoping it could heal the gut and so the intolerances. I also started today supplementing with probiotics. Do you think this could help?
