Is the following true? Maybe...

Ray Peat cautions against cooking bones for too long as they might release too much stored lead. Also, it might be a myth that bones release minerals. Cartilege, on the other hand breaks down more easily and is higher in glycine and makes a better gelatin.

Chicken feet make one of the best gelatins.
