Great to hear from you. Good question.

This is what I learned from my parents. As a child I was always eating raw potatoes, may be instinctively, but my always said that if you eat a raw potato, you will get sick, your stomach will hurt, etc. Then they told me the when was a teenager when I continued eat raw potatoes, that when you eat a raw potato you do not digest it properly and all vitamins and minerals also do not digest and the cooked potato, especially a baked one without topping is digested the best. Then on I was hooked on baked potato and some other potato dishes. I had to have potatoes everyday.

Now I know that raw potato probably has 10 times more vitamin and minerals than baked version, but your answer does make sense to me. Also which one assimilates better in our body has not been proven yet.

I have not eaten potatoes for a while, but will try my raw version tomorrow. I love the purple potatoes.
