Agreed except for your comment about "off the shelf yogurt and kefir" having dead bacteria. No, store-bought yogurt and kefir have had their milk pasteurized BEFORE the cultures are added and multiplied. The good bacteria (probiotics) in store-bought kefir and yogurt are not dead.

This is not to say that kefir and yogurt from the store have as many billions of good bacteria as capsules of probiotic supplements from the health foods store, but yes, these two foods do have living good bacteria, even if you buy these two products at the grocery store.
(this is info for the United States, I do not know what food processing methods are used by mfgrs in other countries.)
