I'm still trying to get my eating habits on track but I get sick of eggs all the time too. I try to dress them up a bit and that helps. I gently cook kale and then spread it in the bottom of a baking dish, then add about 8 eggs and maybe some onions, red peppers and some seasonings. I also add cheese and then bake it. It gives me about 4 or 5 breakfasts, just reheat in the morning.
If you eat potatoes you can shred some and mix them with butter and bake in muffin tins til crispy. Then add a whole egg on top of each cup with some seasonings and optional cheese. Put it back in the oven til the eggs are a little firm, but the yokes are a little runny. These are pretty good and give you pretty much a whole weeks worth of breakfasts.
