I was on strict Paleo for a long time and was super hungry all the time too. Then I added back in very small portions of brown rice (like 1/4 cup at a time and I noticed I had more energy, less hunger, and my hypoglycemia got much better.

Eggs do get boring! I like to make veggie pancakes sometimes. Shredded carrots and whatever green of your choosing- I usually use kale or chard but spinach would work too. chop up the greens really well and add the shredded carrots together in a bowl. Then add a whisked egg to it and mush them together into cakes. then cook them in some olive oil, like a pancake.

I also like to make "breakfast burritos". Shred up some carrot or some winter squash and then shred up some zucchini or whatever other veggie you want. Sautee it in some olive oil and add some fresh minced garlic and whatever other seasonings you want.

For the "shell" I boil a couple large cabbage leaves just until they are soft or "al dente". Once in a great while I will do a gluten free brown rice tortilla.

In a separate pan cook your eggs (I usually make them over easy).

Then scoop your veggies into your "shell" and put your eggs on top. Roll it all up and you've got a burrito!

I eat these for other meals too sometimes. they are great with chicken or beef too. add some plain yogurt and you've got tacos :)
