that IMO, is some of the best cow's milk you can expect to get your hands on. You are fortunate.

Making your own kefir becomes a matter of taste... play with it.

to tart, so not let it culture so long... not tart enough, let it culture longer... thickness depends quite a bit upon the fat content of the milk, which, should not be a problem with the Jersey cows. Some of the very best when grass fed in terms of types of fats and amount.

You could get into making butter and cheese too with that milk.

If I could of gotten hold of Jersey cow's milk like that, I would have been all over it. I am fortunate to have the goat's milk that I get... it is nearly as good.
