it all depends upon the *quality* of the raw milk...

I have made kefir with 2 week old, refrigerated raw milk... which then set on the counter for 4.5 days *culturing* - I actually forgot about it.

no ill effects... even when left out for an additional day unrefrigerated.

What in the world did people do before refrigerators?

Come on people... start using your heads.
