Hi; great effect so far I would say; your supplements list looks fine. I have actually tried the Emergen-C myself a few times as a friend brought it from US. It is OK even if it contains some magnesium hydroxide, sodium bicarbonate (small amounts); even I could tolerate it (!)
zinc competes with iron in uptake; so the tiredness may be iron is going low. There are numerous causes of course; but since you have had this after supplementing zinc..
When it comes to the water; I live in Scandinavia ; so I leave this one to others.
