Just to clarify things for you.
Juice-fasting is actually juice-feasting, as you are still living from external sources of nutrition.
Water-only fasting is living from internal food reserves and has been practiced as a health-recovery measure since the time of Hippocrates and Paracelsus.
We use very reliable reading resources from experienced and qualified personnel concerning this subject.
There is no "brainwashing" by anyone, just factual information.
I agree with you: we should listen to the subtle and not-so-subtle messages of the body in determining our health-path and recovery.
The diet and lifestyle you have mentioned are excellent, but no diet (regardless of its quality) is of any use in the absence of little to no appetite, and where the body is unable to digest or assimilate food.

A water-only fast is in fact a physiological rest, and whose worried, and about what exactly?
No one to my knowledge has recommended tap-water on a fast, but only the best purest water available: distilled.
Spring water btw is full of inorganic minerals, which only serves to clog the body and especially the arteries.

Indeed: fasting is Natures own remedy when called for by the body in both chronic and acute disease.

I'm afraid your knowledge of the fast is rather limited.
Fasting is the most efficient and quickest method of detoxing the body, and where toxins are not "recycled" but eliminated via the kidneys, Lungs, Liver, and skin, or burnt as fuel in a process known as autolysis.
Reverse-osmosis water is good but not ideal, as pure H2O comes in the form of distilled water, and recommended by most qualified authorities on the fast.
This is after all the type of water you consume from both fruits and vegetables.
