I know absolutely nothing about electrolytes so I guess that will be my next research subject! It's always fun trying to get the real information about stuff from medical Science which seems to be woefully misinformed on so much that is really important.
If grains and bread are that important to you add them in after the first week, I'd try to stick to mostly raw with the grains though, add them to a salad or something similar. If you're not worried about weight gain an avocado and tomato sandwich is to die for after a fast. :) During refeeding you would only add one grain at a time, probably just one for the whole day.
And raw nuts and seeds are certainly okay, I'm not sure what portions to advise though. They can be eaten with a fruit meal but eat them after the fruit and allow up to 4 hours before eating again afterwards as the concentrated protein will need longer to digest.
