All those foods that you say give you trouble are also triggers for those with Celiac's.  Anything with Gluten. Wheat, flour, boxed cereals, grains, (they can be cross polluted with gluten) breaded chicken and fried, etc...most flour is made from wheat unless otherwise stated.  It's also in barley, Rye, Oats, and anything fried or made with preservatives usually has gluten in it. Spices have modified food starch, and dextrose has gluten in it. hydrolyzed veg protein has gluten in it...Malt means gluten is in it, beer has gluten and any grain alcohol is debateable...

Everything...and the gluten causes intense inflammatory response in your body so that anything else you eat brings you sensitivities you might not otherwise have....it causes an immune response...which makes you ache in your gut and have constipation, and lower back pain, and other adrenal issues etc...as well as deficiencies because the celia are flattened in the small intestines and can't uptake nutrients, and then the small intestine gets inflammed and cuts and infected and yeast and bacteria get in and you get leaky gut and do not have enough mucos membrane etc...it goes down hill and eventually you can get cancer....just like lungs do with cigarrette smoke....

They are only just now learning and beginning to understand all the effects from celiac's and the findings on how the symptoms are can be different for different people because depending on what area of your small intestine is inflammed or damaged the most, you will see different symptoms..that's why some people have rashes or hives and others do not.  I had reactions to anything acidic, coffee, and chocolate and cola's are very acidic, flour and breaded items made me sick because my intestined were so comprimised...it's a gradual thing in the making...but eventually you degrade if you don't stop the offending substance and your immune system get's all crazy trying to fix you.

I thought it was only candida, and that can be there too, but when the body is dealing with major inflamation, and you keep giving it gluten, lot's of oportunistic bugs can get in and throw off the balance...you have to stop eating the gluten...I had issues with fibroids etc..and the natural docs told me the inflammation was starting from what I ate in my gut and then spreads out to many areas via complicated processes at the celular levels...immune response does that...what I can testify to is that when I finally listened and got off the gluten, I am pain free...inflammation is going down...and I feel I am healing...if you know wheat and flour and acidic stuff bothers you, avoid gluten.  In about 3 mos, you will start to see a major difference in how you feel, for the better, but you can never eat gluten again, or the symptoms will come back...gluten triggers an autoimmune response.  Also it's important to note that you may have celiacs or borderline, but if you avoid wheat, it may not show up on the tests. I've read over and over that it's hard to diagnose in people who've been avoiding bread & flour, but that doesn't mean they don't have it.  I got diagnosed when i did the ASI test on my adrenals, which showed flatlined cortisol levels. The Diagnos-Techs lab also did a Gluten antibody test which was very high in me, so my ND informed me I had celiacs.  Of note 2 years ago, I asked my Md to test my blood for the same thing, but it came back negative. It's hard to diagnose...and I didn't eat much bread because it makes me feel so bloated and poorly.  Anyway...it's worth trying the diet to find out and diagnose yourself. Btw--An immune response is different then a food allergy....
