Awesome explanation thank you sans. That makes 100% sense. I need to find somewhere that I can buy my meat without all these additives... I will search for this with the thought that bacon still contains sugar.

PS Love your last line. Bacon has been the killer for me from day one. I love it so much but it has had this ability to shelf me so bad...
