Well, nitrates and nitrites are poisons. They are in all processed meats, unless it explicity says otherwise on the package. Any toxin is going to aggravate candida. The whole idea of candida fighting is detoxing and your body cannot "tox" and "detox" at the same time, so anytime you eat processed foods you are shooting self in foot. Not everything about fighting candida is directly about the sugar. The toxins interfere with and compromise the body's ability to fight things off, affecting the organs we need to have in a healthy state to get better. Whole Foods sells natural, uncured bacon, but like Michelle mentioned, you are still getting some sugar, so should be used very sparingly if you get a bacon itch that must be scratched. I feel for you - the bacon aftermath is one of the worst food reactions I ever had!
