In our area there is one apple cider source left that does not cook the juice. He is Amish and the State forces him to add chlorox bleach to the juice. We sold milk 30 years ago and they poured chlorox bleach in the milk everytime they picked it up, no wonder Dr. Clark says bleach is the numb er 1 cancer cause in the USA.

For me the chlorox is shut off and I buy about 75 gallon a year to freeze and October is apple juice time.

This same source also allows the juice to turn to vinegar and sells thousands of gallons per year. This is a very rare thing and maybe the last of his kind.

Bulk yeast would be the way to go, I have only seen the small packages.

Actually the best way to go would be to raise your own yeast, it is easy, but I have never took the time to experiment. I have tried the grain method and it is too powerful for most to try.

The friendly yeast eat the bad yeast andn this can cause allot of mucus in the process, which people would take for the flue.
