I agree with the safety information you posted completely. IP6 is an isolated part of a natural food used for cleansing & healing. It's natural, yes, but we'd never 'naturally' be able to consume enough of the food to get the quantities we take when supplementing & cleasning.
I have read several things similar to what you posted. Here's others:

IP6 is "as safe as water". However, caution is advised when using IP6 supplementally for an extended period. Phytate in foods reduces mineral absorption, especially iron. Supplemental phytate (IP6) will further contribute to this potential problem and thus additional mineral supplementation may be required.

We know it removed an 'excess' of iron, so obviously it could be detrimental to someone with low iron/anemia. It seems to me like a greater number of people have problems with low iron than they do 'excess'...I'd want to be SURE I had adequate iron stores before taking IP6.
IP6 has a variety of 'proven positives', but when something chelates minerals, metals and/or hinders absorbtion, caution is ALWAYS prudent (imo).
